VINEYARDS From 25 year old vines in vineyards on the Aeolian Islands of Salina & Vulcano, north of Sicily, Italy. Vineyards have a Southeast exposure at 1,310 feet above sea level on Volcanic soil.
VINIFICATION: Late harvest; grapes are dried on mats or racks (the traditional “cannizzi” which take their name from “canne,” reeds) for 15 to 20 days. The grapes then undergo skin maceration and temperature-controlled fermentation. The wine ages in stainless steel prior to six months of bottle aging. 13.00%ALC
TASTING NOTES: Gorgeous amber color with flashes of brilliant, sunny gold, outstanding viscosity and depth. Exemplary bouquet, magnificent yet graceful, ample and elegant, with notes of dry figs, dates, ripe apricot, honey and sweet spices. Velvety roundness on the palate, shows distinctive sweetness that never palls, sustained as it is by superb freshness. Wonderful body, balance and persistence. Winemaker Fabrizio Zardini says “At Hauner we believe that, given the amazing soils, unique landscapes, and fantastic grapes of the Aeolian Islands, we are honour-bound to create wines worthy of such fruit.” Wonderful with almond paste-based desserts, Sicilian cassata, pastries; also with piquant pecorino cheese with orange blossom honey.
